I love Shepherd’s Pie and am so fortunate to be shared this recipe by a dear friend. The recipe is simple but the pie turned out so delish (^-^) This will be a good alternative for lunch on weekends! The whole family would be able to enjoy this scrumptious dish.
Grace’s recipe used both minced beef and chicken but as I do not eat beef, I used all chicken instead. And I just ran out of Italian herbs, and so used the Mixed Herbs to replace. The pie was so yummy that everyone kept helping themselves to more. Even for Joy, who does not eat vegetables (there were the mixed vegetables in it), said the pie was good!

(For the filling)
500g minced beef (I used all chicken)
250g minced pork
2 large yellow onions (chopped)
1 cup frozen mixed veggi
1 can button mushrooms (sliced)
2 tsp dark soya sauce (this for colour)
1 heap tbsp corn flour (get this ready in a bowl n mix with little water enough to dilute)
Cheddar n mozarella cheese (amount as preference)
Salt and black pepper
1 tbs Italian spice (I used mixed herbs)
1 beef cube (optional) if this is added no need salt (I used chicken stock cube instead)
Oil for frying
Fry the chopped onions till soft, add the meat.
Break it up into fine pieces and when it’s 3/4 cooked, add the Italian spice , mix well.
Add the sliced mushrooms and frozen veggi, mix it well with the minced meat.
Add the stock cube or salt and pepper.
Add the dark soya sauce. Mix well.
Lastly stir in the corn flour solution and pour over the meat. Stir till it thicken.
(For the potatoes)
6 medium potatoes (russet is best)
approx. 50g butter (softened)
3/4 cup milk (warm would be good)
1 tsp salt
Peel the potatoes, cut each into half.
Boil them in a pot of water till is soft enough to mash.
Drain and remove potatoes to a big bowl n mash.
While mashing add butter (roughly 50g) while potatoes are hot.
Add milk bit by bit while mashing.
Mash till is fluffy and light.
Add the salt and mix well.
To assemble the pie:
Using a 9 inch baking tin or any casserole that is deep to hold all the above ingredients but must be able to use for baking in the oven.
Bottom — cooked meat (press down and leveled it)
Next — cheese (combination of both )
Top — mashed potatoes (cover the entire tin/casserole evenly). Use a fork to run through the top. (I piped the mashed potatoe instead onto the top.)
Preheat oven 170deg C.
Bake the pie for 20 to 30 mins or till the top is slightly browned.
Let it sit for a while before cutting or it will be too soft.
Serve and enjoy!!!
