Braised Sea Cucumber with Chicken and Mushrooms

This post is so long overdue!!! I prepared this Braised Sea Cucumber with Chicken Wings and Mushrooms and posted it on my FB in February but it took me this long to type the recipe (><) So sorry! It’s better late than never and I hope you can try out this flavourful dish too!

My in-laws go to Malaysia often to visit relatives and other than salted fish which my MIL often buys for me at the trips, she would often get me sea cucumbers too. I’m actually not a fan of this delicacy, hence all the more I should do up a nice dish to bring justice to the sea cucumbers. This recipe which I adopted from Meg’s blog, Dreamersloft, is definitely a keeper! The whole dish is so flavourful that everyone asked for extra helpings (^-^) I made some amendments by adding sesame oil, Chinese Hua Tiao wine, dark soy sauce and pepper.

{RECIPE}

Ingredients (serves 2 pax)

  • 8 pcs of chicken wings, separate into winglets and drumlets.
  • 2 medium size sea cucumber. Soaked till soft. Cut into rings or strips.
  • 6-8 pcs of dried chinese mushroom, presoaked. Keep the mushroom water (200ml) for use.
  • 1 knob of ginger, cut into slices.
  • 3 stalks of spring onion, cut into long strips.
  • 300ml chicken stock
  • 1/2 tbs sesame oil
  • 1/2 tbs Hua Tiao wine
  • 1 and 1/2 tsp dark soy sauce
  • dash of pepper
Method
  • Rub salt onto the chicken wings and wash thoroughly.
  • Heat a pot with some oil. Once hot, add half of the ginger and half of the spring onion.
  • Once fragrant, add the sea cucumber. Add the sesame oil, Hua Tiao wine, dark soy sauce and pepper. Stir fry for a few minutes then add 150ml of chicken stock and 50ml of mushroom water. Let simmer for a few minutes, dish up and set aside.
  • In the same pot, add more oil. Once hot, add the remaining ginger slices and spring onion.
  • Once fragrant, add the chicken wings, stir fry for a few minutes then add the mushrooms. Fry till the chicken wings turn brown. Then add the sea cucumber, 150ml of chicken stock and 150ml of mushroom water. Let simmer till sea cucumber turn soft. Finally add some corn starch water to thicken the sauce.

Serve immediately with a hot bowl of rice and this meal would already bring you much satisfaction and delight! Enjoy!
