I have some chicken thighs in the fridge and was wondering what to cook with them. Hubby who was unwell and didn’t go work, requested to eat Teochew porridge for dinner. Immediately I thought of doing this braised chicken with bittergourd. Other dishes include his fav – Steamed Minced Meat with Salted Fish (I did not take any pictures) and I followed largely the recipe from Dr Leslie Tay’s famous blog, ieatishootipost. The dish turned out very nice and we enjoyed it with our hot Teochew muay. It was such a comforting meal.
Now back to the dish, Braised Chicken with Bittergourd. I actually don’t fancy bittergourd and would so far eat only 2 dishes of bittergourd, namely black bean braised pork ribs with bittergourd and this braised chicken. Mum used to cook bittergourd omelette for us when we were young and I would sulkingly forced it down my throat reluctantly. However, when cooked the bittergourd this way with black beans and braising with meat, the veg does not seem so yucky anymore (^-^) The meat, the bittergourd after long simmering, became so tender and yummy. This goes well as a noodle dish too, I am sure.
