Pandan Ombre Cake with Gula Melaka Swiss Meringue Buttercream


Some friends (Eleanor, Karen and Valerie) were tempting me with their beautiful renditions of pandan gula melaka cupcakes. I love gula melaka in all desserts. As for bakes, I have tried gula melaka chiffon and I love it so much.  When I got to know that a friend’s birthday was just a few days away, and knowing that this friend loves gula melaka a lot, I decided to try baking her an ombre cake as a surprise. So it was my first pandan gula melaka cake, my first ombre layered cake and my first such ombre frosting. Thus, instead of whipping the cake up in one, two hours, I actually took the whole morning till afternoon to finish the job! I have “sacrificed” my Saturday (I usually don’t bake on Saturdays and sometimes Sundays, as these are my family time, ok, and chauffeuring duties bound) but I felt accomplished seeing the cake done and ready to pass to my friend as a surprise (^-^)

My friend, Wil Li 姐, was pleasantly surprised and did not stop thanking me, though I was feeling bad when I got to learn that she has ended up having 2 cakes (her hubby also ‘surprised’ her by getting a cake from their ‘no-surprise’ Bengawan Solo) She shared the cake with some of our mutual friends from PSG who met up in school the Monday morning. And a couple of them messaged me to tell me that the cake was tasty (#^^#) It wasn’t the compliments that flattered me but the knowledge that the joy could be shared with friends that delighted me.

I know I would bake this cake again as I personally love the texture of the cake, the fragrance of the pandan  flavor and the sweetness of the gula melaka swiss meringue buttercream frosting.
